Vietnamese vegetarian dishes to try in Da Nang
From phở and mì Quảng to crispy spring rolls and home-style rice, here are the Vietnamese dishes on the vegetarian menu at Sita in Son Tra, and what to expect from each.

Noodle dishes
Phở is the best-known Vietnamese noodle soup, and Sita makes it without meat. Mì Quảng comes from Quảng Nam, just south of Da Nang: wide turmeric noodles with very little broth, here topped with mushrooms and tofu and served with rice crackers and fresh greens. Bún trộn Sita is a bowl of mixed dry noodles, and bún thái is a Thai-style noodle soup.

Spring rolls and starters
Crispy fried spring rolls are called chả giò in much of Vietnam and ram in central Vietnam. Sita serves ram cuốn cải, fried rolls with mustard leaves, and a spring roll platter (mẹt cuốn) with fresh herbs and dipping sauce. For something lighter, try the fresh spring rolls (gỏi cuốn tam sắc) or bánh xèo, the crisp Vietnamese pancake.

Home-style rice (cơm nhà)
Cơm nhà is a table of shared dishes eaten with rice, the way a Vietnamese family eats at home. Pick a few: grilled eggplant with scallion oil, mapo tofu, braised mushrooms, stir-fried vegetables, a marinated winter melon salad or a sour soup (canh chua).

Hotpot for sharing
For groups there are two hotpots: a spicy and sour mushroom hotpot (lẩu nấm chua cay) and a fermented tofu hotpot (lẩu chao).
Drinks to try
Try butterfly pea flower tea (trà hoa đậu biếc), which comes in a teapot, a jasmine oolong milk tea, osmanthus tea with cinnamon, Vietnamese salted coffee, or a fresh sugarcane and coconut juice.
